Homemade Trail Mix

You will Need:

Food items that have only a little left in the package.

Some ideas are: fish crackers, pretzels, Cherrios, Kix, Chex, marshmallows, raisins, yogurt or chocolate covered raisins, crasins, chocolate chips, butterscotch chips, peanut butter chips, coconut, dried fruit, peanuts or other kind of nut, M&Ms, teddy grahams, etc...

Recipe:

Dump them in a large garbage sack/ grocery bag, mix it up and then divide. This is a great activity at a play date. Have every mom bring 1 or 2 items.

Wake-Me-Up Breakfast Smoothie

2 6oz containers vanilla yogurt
2 cups sliced fresh strawberries
1 1/2 cups ice
1 banana
1/2 cup milk
2 Tbl wheat germ
1 Tbl maple syrup

Place all ingredients in blender. Process until smooth, stopping once to scrape down sides. Divide smoothie between 6 glasses. Serve immediately.

Chocolate Mousse

13oz bittersweet Chocolate
2 Tbl unsalted butter
2 egg yolks
1 1/2 c heavy cream
2 Tbl sugar
1 tsp vanilla extract

In microwave safe bowl, combine chopped chocolate and butter. Heat in the microwave until melted, about 35 seconds. Stir. Whisk in yolks and set aside to cool. Pour cream into chilled bowl. Beat on medium till it starts to thicken. Add sugar and vanilla and whisk until the cream starts to form stiff peaks. Carefully fold the whipped cream into the cooled chocolate mixture. Serve cold. 8-10 servings

PJ’s Favorite Easy Peanut Butter Cookies

From: Lincoln cooking project

1 cup Peanut Butter

1 cup Sugar

1 Egg

Preheat oven to 350. Combine all ingredients in a bowl and mix well. Shape into 1 ½ inch balls. Place on cookie sheet. Butter bottom of glass and press to flatten cookies. Bake at 350 for 10 minutes.

S'More's

You will need:

graham crackers, broken into 4ths
chocolate chips
mini marshmallows
broiler friendly dish (9x13 or cookie sheet)

Recipe:

1. Pre-heat broiler.

2.In the pan, arrange crackers so they don't over lap. Sprinkle a good amount of chocolate chips on top. Then add mini marshmallows on that, but not too much.

3.Place pan in broiler for a few minutes, until the marshmallows are browned.

*messier than normal s'mores, but good for impatient little ones

Caesar Chicken Salad Sandwich




From: Campbell's Cookbook

You will need:

1 can chicken chunks in water, drained
2 Tbs Caesar salad dressing
1/2 Tbs mayo
4 slices of bread
lettuce leaves
small bowl

Recipe:

1. Mix chicken, dressing and mayo in small bowl.

2. Divide mixture between 2 slices of bread. Top each with lettuce and remaining 2 slices.

3. Eat one sandwich and give one to a friend. :)

Biscuit Donuts***more adult help needed

You will need:

1 container biscuits, 10 ct.
3 tin pie pans
sugar
powdered sugar
cinnamon
oil (veggie or peanut)
large skillet
metal tongs
wire rack

Recipe:

1. Fill the skillet with about a 1/4 inch of oil, heat. Poke a hole in each biscuit and shape into a small donut.

2. When oil is hot, place each donut into the oil using tongs. Let sit for 1 minute or until lightly brown depending on how hot the oil is. Flip and do the same on other side. Let rest on wire rack.

3. In the 3 tins: add powdered sugar in one, sugar in another, and a mixture of sugar and cinnamon in the last.

4. When donuts are cool enough to handle, roll them into the topping of your choice.
